Jim makes hot dogs from regional game (rattler, elk, pheasant, etc.). He told me his wife makes duck egg cheesecakes. Try the pheasant dog with cream cheese and Coke-sauteed onions!

A hot dog joint that specializes in some interesting meat choices including elk, deer, rattlesnake, and other seasonal meats along with some delicious fried mac & cheese balls

Biker Jim started with a hot dog cart slanging tantalizing caribou, buffalo, and rattlesnake dogs (among the regular all-beef dogs, but c'mon) on the 16th street mall. Now he has a brick and mortar location in the Ballpark area (walkable to Coors Field) where he's expanded his menu options and added an excellent beer list. Yes, the dogs are worth it. Don't question it, just do it!
