You'll likely find the owner, know by locals as 'Mama', bartending. Mama imports Soju, a Korean wine, popular with the soldiers stationed at Fort Huachuca. The night scene at IK usually starts around 10 PM after some brave souls wander over from Horned Toad (another local bar) to howl their favorite songs.
