In the summer, Saturday morning farmer's markets on College are a MUST.
There are 11 parks in Appleton and each is beautiful and features some kind of attraction, like disc golf, waterfront views, morning community yoga, and other great things.
Appleton is a politically active city and Houdini plaza often sees weekend protests and political events to raise awareness. If you're a like-minded person to the protestors, stop by and offer some words of encouragement or hot cocoa if it's cold weather. You'll be warmly welcomed and may make some new friends.

Younger kids: The children's museum is AMAZING. So many fun exhibits that I wish I was still a kid when I walk by. It's right on College Ave downtown.
Kids of all ages: Go to the Atlas Science Center(formerly Paper Discovery Center) for an incredibly unique educational experience.
